Our Garlic
The California Difference
The Garlic Company is strategically located in California’s San Joaquin Valley. The area is well known for not only a warm Mediterranean climate, but also rich, fertile soil. Both characteristics help to create the ideal conditions for growing garlic.
The Garlic Company’s vertically integrated structure also helps to ensure premium garlic. We maintain our own seed program in Oregon, where each year, raw garlic bulbs are shipped to California, processed, and planted. By maintaining an “in-house” seed program, The Garlic Company is in complete control of its raw material chain, ensuring not only consistent flavor but also complete traceability.

Bulb
The variety of garlic grown in California originated from seed that came from the Mediterranean region. This heirloom variety possesses an outer appearance that is white to off-white in color.
Roots
A recognizable characteristic of California garlic is its roots. While neatly trimmed, California garlic retains the roots.
FLAVOR
In independent test studies, California garlic not only has a solid structure, but it rates higher in terms of brix level, a critical measure of taste. California garlic is well known for producing a true, savory, robust flavor which distinguishes California garlic from other imported varieties. It is one reason many respective chefs opt for the overall quality of California garlic.
Consistent Reliable Supply
California’s unique climate and fertile soil provide consistency in both yields and quality. Overlapped with the consistent supply is the consistency of flavor provided by California-sourced garlic.
Product Traceability and Overall Food Safety
The Garlic Company’s vertically integrated structure allows for simple product tracking and enforcement of proper treatments and processes. Whereas compared to competitors overseas, the garlic can be sourced from multiple small farms. Consumers have expressed concerns ranging from basic plant sanitation to the pesticides implemented in farming practices.
